INGREDIENTS

  • 2 Pints Cherry Tomatoes
  • 8 ounces Feta Cheese in a block or crumbled
  • 1/4 cup Olive Oil
  • 1 bunch Fresh Basil chopped
  • cloves Garlic minced or whole
  • Salt to taste
  • Pepper to tast
  • 4 ounces Pasta

INSTRUCTIONS

  • In a baking dish combine cherry tomatoes, olive oil and a pinch of salt and pepper. (Also add whole garlic cloves if you want to roast the garlic instead of adding minced garlic)
  • Add the 8 ounce block of feta cheese to the middle.  Top the feta with a drizzle of olive oil.
  • Bake at 400 degrees F for 35 to 40 minutes.  Your cheese should be soft and the tomatoes would have burst their skin.
  • Meanwhile cook your pasta according to package instructions.
  • Remove the baking dish from the oven and immediately add basil and minced garlic (if using) and stir.
  • Add your cooked pasta and stir to combine.
