With the cooler Fall weather, sometimes it’s nice to warm up to a nice bowl of homemade soup.  We have just the recipe!  Try this easy homemade butternut squash soup, you wont be disappointed.

 

Ingredient Checklist

  • 2 tablespoons butter
  • 1 small onion (cooking onion), chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 2 medium potatoes, cubed
  • 1 medium butternut squash, peeled, seeded and cubed
  • 1 (32oz) container of chicken stock
  • Salt & pepper to taste

 

Step One:

 

  • Melt butter in a large pot with the chopped onion, celery, carrot, potatoes and squash, until lightly browned.   Pour in chicken broth until it covers the vegetables. Bring to a boil and reduce heat to low and cover.  Simmer for approx. 40 mins, or until the vegetables are tender.

 

Step Two:

 

  • Transfer soup to a blender, and blend until smooth.  Return mixture to pot, and mix in any remaining chicken stock to desired consistency.  Season with salt & pepper to taste.
